Guilt Free Meatloaf with Plum Tomatoes

Ingredients and Preparation

Ingredients Measures
lean ground beef ½ pound
ground turkey ½ pound
lean ground pork loin ½ pound
chopped shallots 3/4 c.
margarine 1½ tsps.
canola oil 1½ tsps.
large garlic cloves - minced 2
Egg substitute equal to 2 eggs  
Worcestershire sauce 1 tbsp.
soy sauce + extra for topping 1 tsp.
Dijon mustard 1 tbsp.
chili powder 1½ tsps.
dry thyme ½ tsp
black pepper ½ tsp
salt ½ tsp
fresh bread crumbs dampened slightly with chicken stock 1 cup
grated parmesan chees 2 tbsps.
Plum tomatos, halved lenghtwise, drained & seeded 1 can
    Directions
  1. PREHEAT OVEN TO 375 DEGREES
  2. With your hands, lightly combine ground beef, turkey and pork and set aside.
  3. Sauté the shallots and celery in the margarine and oil over medium heat until just beginning to wilt – 2-3 minutes.
  4. Stir in garlic and cook another minute. Combine with the meats.
  5. Stir together the egg substitute, Worcestershire sauce, soy sauce, mustard, chili powder, thyme, salt and pepper.
  6. Pour over the meat mixture and combine.
  7. Add the bread crumbs.
  8. Form into a loaf and bake for 30 minutes.
  9. Remove from the oven and sprinkle the top of the loaf with cheese.
  10. Bake 15 minutes more.
  11. Sprinkle the tomato halves generously with soy sauce, then place in overlapping rows on top of the loaf.
  12. Bake 30 minutes longer.
  13. (Total cooking time 75 minutes) let rest 5-10 minutes before slicing.
