Although they may not be as grand or visually exciting as other Thanksgiving dishes, mashed potatoes always manage to disappear from the dinner table.

The key to great mashed potatoes is not to boil them too long. The starch in overcooked potatoes will make them sticky when mashed.

One simple tip for reducing calories but keeping flavor is to skip the butter and whole milk and cook the potatoes in chicken broth with roasted garlic. Drain the potatoes and reserve the broth. Then beat the potatoes with enough of the hot broth to make them light and fluffy.
