You have turkey for days, but can't bare to eat the same thing over and over again. Finding clever ways to keep that protein will make you savor every remaining bite of the big bird. Lambrusco'z stopped by to share two recipes they think you'll love.
Tempting Turkey Enchiladas
3 cups of leftover turkey shredded or chopped. (Light or dark meat)
2 cups of your favorite shredded cheese
2 cups of your favorite green chili enchilada sauce
1 pint of Lambrusco’z Famous White Queso
8-10 soft taco sized flour tortillas
1 teaspoon of chili powder
1 teaspoon of cumin
1 teaspoon of roasted garlic
In a large bowl mix turkey, 1 ½ cups of shredded cheese, half cup of enchilada sauce, half pint of white queso, then add spices.
Mix well
Fill and roll your enchiladas
Before your put the rolled enchiladas into your 9x13 pan, cover the bottom of the pan with enchilada sauce.
Top enchiladas with remaining white queso, enchilada sauce and cheese
Bake at 350 for 30-40 until golden brown
Potato Chili Rellenos
Leftover mashed potatoes (any amount will do!)
Chili powder
Cumin
Shredded cheese
Green onions
Green chili
Add ingredients to taste depending on how many potatoes you have
left over. If you really want to impress your family or friends you can stuff the mashed potatoes
Into a roasted poblano pepper half!
