Lambrusco'z is long-time favorite eatery in Tulsa serving sandwiches, salads, casseroles, dips and more. The business was started by a mother and daughter who owned a catering business in 1994. Now they have more than 300 items all made from scratch! Chef Shelly Hayslett stopped by to make a Mexican dish with a Texas twist.
Tex Mex CasseroleINGREDIENTS:
1 Pint Lambrusco’z Black Bean Salsa
1 Pint Lambrusco’z Fat Free Bean Dip
½ Pint Lambrusco’z White Queso
1 Dozen Jalapeno Cheddar Tortillas
2-3 Cups Cooked Meat of Your Choice
DIRECTIONS:Layer as follows:
½ pint black bean salsa
½ pint fat free bean dip
2 cups cooked meat
1 cup shredded cheese
1 jalapeno cheddar tortilla
½ pint white queso (more if you like)
1 cup shredded cheese
1 jalapeno cheddar tortilla
Layer remaining ingredients and top with shredded cheese
BAKE: 30-45 minutes at 350°
VEGETARIAN OPTION: substitute cooked meat with favorite vegetables or just leave out meat
