Tacos al Pastor

1 lb fresh ground pork
1 tbs minced roasted garlic
½ tbs ground cumin
½ tbs dried Mexican oregano
½ tbs minced fresh pineapple
½ tsp salt
¼ tsp black pepper
1/8 tsp smoked paprika
2 slices fresh pineapple
8 corn tortillas
Minced onion
Chopped cilantro
Fresh guacamole

Combine pork, garlic, cumin, oregano, minced pineapple, salt, black pepper and smoked paprika in a large bowl and mix well. Form mixture into 4 equal size patties.
Pre-heat grill to medium-high heat. Cook patties until done, about 8-10 minutes per side.
Let patties rest and cool slightly. Grill sliced pineapple 4-5 minutes per side to mark. Thinly slice patties and chop pineapple. Fill each tortilla with equal portion of meat and pineapple, top with onion and cilantro. Serve with fresh guacamole and lime wedge.
