4 slice(s) cinnamon raisin bread (or other fruit/nut bread)
¼ cup light brown sugar
1 tsp grated lemon zest
2 tsp fresh lemon juice
3 cups sliced strawberries
¼ cup mascarpone, (Italian cream cheese)
Toast bread or wrap bread in foil and warm in the oven at 300° while you are making the topping.
Heat a large sauté pan over medium-high heat. Add sugar, lemon zest and lemon juice and cook until the sugar melts and the mixture begins to bubble. Add strawberries and stir until the berries are heated through.
Spread 1 tablespoon mascarpone on each piece of toast. Top with the warm berries.
