Patatas Bravas
Fried Potatoes with Spicy Tomato Sauce Recipe:

Serves 4

½ cup crushed tomatoes
1 tbsp olive oil
1½ tsp red wine
1 tsp hot smoked paprika
¼ tsp sugar
1 serrano chile, minced
Kosher salt, to taste
1 lb baby Yukon Gold potatoes
2 tbsp unsalted butter
2 tbsp olive oil

Purée tomatoes, 1 tbsp. oil, wine, paprika, sugar, and chile in a blender. Season with salt, transfer to a bowl, and set aside.

Fill a medium sized heavy saucepan with cold water and the potatoes. Heat to a boil then allow to simmer until the potatoes are fork tender. Drain.

Heat the butter and oil over medium heat until butter is melted. Add potatoes; cook until golden brown, 3–5 minutes. Transfer to paper towels; season with salt. Serve potatoes with brava sauce.
