Pork Burger with Peach Compote

For the burger:

1# Ground Pork (Pork & Greens)
1 small yellow candy onion, diced (One Tree Hill Farm)
2 cloves Red Janice Garlic, minced (One Tree Hill Farm)
1/4 tsp Fennel seed, lightly crushed (The Spice Market)
Salt & fresh ground pepper


Combine all ingredients and form into patties of desired size. In a cast iron (or nonstick) skillet, cook over medium heat until almost cooked though. Top with Havarti slices and finish under a broiler.



For the Peach compote:

3 medium Porter Peaches, or 5 Saturn Peaches (AK Farms) diced, with skin still on
1/2 small yellow candy onion, diced (One Tree Hill Farm)
1 fresh Cayenne pepper, sliced (or to taste) (Chili's Garden)
Salt, to taste

In a small saucepan over medium heat, sweat the onions for about 2 minutes. Add the remaining ingredients and cook until they begin to soften, about 2 minutes more.

To Serve:

Sliced Havarti Cheese (Lomah Dairy)
Sliced tomatoes (Three Springs Farm)
Fresh Basil, chiffonade (Three Springs farm)
Sliced red candy onion (One Tree Hill Farm)
Hamburger Buns or Ciabatta Rolls (Farrell Family Bread)
