Pistachio Crusted Alaskan halibut with rock shrimp, Porter peaches and capers Recipe:
4..........8oz pieces of halibut
1 cup.........hulled pistachios, pulsed in a food processor
1/2 cup.......canola oil
1lbs.........rock shrimp
2...........Porter peaches, diced finely
1/4 cup.........sweet yellow onion, Julianne
1/4 cup.........capers, drained
1/2 cup.........good white wine
1/2 lbs..........unsalted butter, cubed
salt and pepper to taste
Preheat an oven to 400 degrees. In a heavy bottomed saute pan heat about 2oz of the oil till smoking. Coat the top of each piece of halibut with a little oil, season w salt and pepper and press into the pistachio pieces. Place in the saute pan, nuts down and saute until lightly browned. Turn each piece and place into the oven for 5 to 8 minutes. In another saute pan heat 3oz oil till smoking and add the shrimp, peaches, onions and capers and saute until the shrimp are almost cooked. Season w salt and pepper and deglaze w the wine. Stirring the whole time, add a cube of butter at a time until all is emulsified. Spoon equal amounts of the saute into 4 bowls and top w a piece of halibut.
