Mardi Gras has come and gone, but you don't really need a reason to indulge in a tasty Creole dish using flavorful spices and fatty sausage. Just head to Brookside in Tulsa where Doc's Wine and Food serves up Creole daily. 

Chicken Jambalaya Recipe

1/4 cup bacon fat
.5lbs andouille sausage, diced
1 yellow onion, med dice
5 stalks celery, med dice
1 green bell pepper, med dice
1 red bell pepper, med dice
1 tablespoon minced garlic
2 bay leaves
2 tablespoons dry thyme
2 teaspoons cayenne
1 cup tomato paste
3 cups dry white rice
6 cups chicken stock
1lbs small peeled and deveined shrimp

In bacon fat sear sausage. Add vegetables and saute until very caramelized. Add garlic, bay, thyme, cayenne and tomato paste and cook another 2 minutes. Add rice, stirring in and cook for one minute. Add stock and bring to a boil. Reduce heat to a very low simmer and cover. Cook for 30 minutes and add shrimp. Cook for another 10 minutes, kill the heat and let stand for 10 minutes. Taste for seasoning and serve.
