Cajun Shrimp Cakes & Southern Cheese Grits Recipes

While you may not be racking up beads in New Orleans on Mardi Gras, you can still cook a cajun dish with a southern favorite. Shelly Hayslett, chef at Lambrusco'z brings Fat Tuesday to you with Cajun Shrimp Cakes and Southern cheese grits. 

Cajun Shrimp Cakes
3 T vegetable oil
½ C celery
½ C onion
1 T chopped garlic
½ lb cooked shrimp
3 T mayonnaise
1 T Cajun or Old Bay seasoning
½ C Panko bread crumbs
Saute celery and onion in vegetable oil, add garlic, sauté until onion is translucent, set aside to cool. In food processor, pulse shrimp with mayonnaise until coarsely chopped. Pour into mixing bowl add Cajun seasoning, sautéed onion, celery and garlic, add panko and stir to combine. Form into cakes and fry in skillet until golden on both sides. Serve with hot cheese grits if desired.

Southern Cheese Grits
2 ¼ C milk
½ C quick grits
¼ - ½ C grated cheese (your choice)
1 T butter
Bring milk to milk to boil, slowly stir in grits. Reduce heat to low, cover and cook 12 mins or so until thickened, add cheese and butter, cook 2-3 minutes until melted. Add salt and pepper to taste.
