Bittersweet Chocolate Truffles

Makes about 24

8 oz good quality bittersweet chocolate, finely chopped or use chocolate chip
½ cup heavy cream

Assorted toppings: cocoa powder, toasted sweetened shredded coconut, finely chopped nuts, crushed peppermint candies, powdered sugar


Place chocolate in a medium bowl. Bring cream to a boil in a small saucepan over medium-high heat; pour over chocolate. Let sit 2 to 3 minutes, then whisk until smooth. Set aside in a cool place until firm.

With a spoon, scoop out a heaping spoonful of chocolate, roll into a ball and place on a parchment covered baking sheet. Continue until all chocolate is rolled.

Place a variety of toppings in shallow bowls. Roll balls in toppings, pressing in and covering chocolate balls completely. Return to baking sheet; chill in the refrigerator until set.
