Baja Jack's Burrito Shack has two locations on Riverside Parkway and Owasso. Burritos aren't their only specialty. Jack Coleman owner of the Shack shares his famous fish tacos. "Fish is a staple of Baja-style food and you see “fish tacos” popping up on menus all over," Coleman said in a press release. "Baja Jack’s serves true-to-the-original Fish Tacos, just like you would get on the beach in Rosarita or Ensenada."
It's the "Build Your Own" concept that makes Baja Jack's different from other Mexican eateries. "The 'flavor profile' of a custom burrito can get even more complex once toppings like salsas, hot carrots, cilantro, guacamole or queso are added. The salsa bar hosts seven different salsas include mango salsa, house and chipotle salsa to name a few.
Recipe for Baja Jack's Famous Fish Tacos:
Choose a mild white fish like Tilapia Fillet (or buy fillets) and section into strips
Season flour with salt, pepper and spices to taste (ours is our secret!)
Dip fillets into flour and then into egg and deep fry in hot oil until golden and crisp
Lay fish into soft taco sized flour shells
Add fresh shredded cabbage, pico de gallo, guacamole and salsa if you wish
