A Guide to Chicken Salad

It's easy. It's delicious and dog gone it, people like it. Chicken salad has been a staple in children and adult's lunch box for decades, but everyone makes them a little different. Lambrusco'z Chef Shelly Haylett has three different variations to satisfy that chicken salad craving.

Apricot Chicken Salad Recipe:

6 cooked, shredded chicken breasts
½ C chopped celery
½ C chopped green onions
½ C sliced, toasted almonds
½ C mayonnaise
1 C Lambrusco’z apricot preserves ($6.99)

Mix all ingredients and refrigerate until time to serve. Serve with bread, rolls or crackers.
*For curried chicken salad, add 1 ½ T curry powder and ½ C dried cranberries.

Berry Delicious Chicken Salad Recipe:

6 cooked, shredded chicken breasts
½ C chopped celery
½ C mayonnaise
¼ C Dijon mustard
1 C Lambrusco’z strawberry preserves ($6.99)
½ C toasted pecans
½ pint sliced strawberries
¼ C chopped fresh mint

Stir together first six ingredients until well mixed, add berries and mint and toss gently.

Chicken Salad Chicken Recipe:

Boil boneless, skinless breasts in water with salt, pepper, garlic and rosemary.
*May boil in chicken broth if desired.
